Tiffin aka Chocolate Biscuit Cake aka Refrigerator Cake


Tiffin! The sweet of many names. And indeed more than one incarnation.

Tiffin is known in South India as a between-meals snack or light lunch. Much like the Japanese have Bento Boxes for their immaculately compartmentalised lunches, the Indians have Tiffin-Boxes. Tiffin over here in the UK is simply refrigerator cake or chocolate biscuit cake.

Peanut Butter Cookies


Sometimes only a treat from childhood will do. Peanut Butter is the one smell, texture and flavour that reminds me of being a kid. I remember white plastic bread smeared together with peanut butter, I remember our breaths smelling of it as we raced around the playground. I remember laughing at friends who's parents stuffed celery with it and being grossed out and then in love with peanut butter combined with strawberry jam. The first time I ever tried Reeses Peanut Butter Cups, bought at a local American airbase by friend with American family. I had to wait another 12 years before I would taste anything so good again.

Cinnamon Raisin Bread

When I first met Paul, I really couldn't stand raisins, I hated cinnamon raisin bagels, raisin bran, you name it. As we progressed on our blog, both of our foodie tastes expanded and I gradually allowed those little wrinkled grapes into my cooking repertoire.

Nowadays, I can't get enough of this little bursts of tart sweetness. Right now, I have some currants, sultanas and raisins slowly sozzling in an apple brandy and cointreau bath, langurously waiting to be stirred in a christmas pudding in a few days.

Dried fruit is great for people watching their sugar intake as it provides a desirable level of sweetness to cookies or baked goods that you would seek in a bar of chocolate otherwise. Sure, they still have sugar but they are (fairly) unrefined. And I don't mean that in an anti-Coco Chanel type way.
